Recently I've been motivated to try new Chinese recipes. Maybe it's because I go back to work in less than a month and I'm not sure I have the luxury of time to explore new dishes. I imagine our evenings to be rushed with us picking Isabelle up, back home trying to get through her dinner, bedtime routine (bath, bedtime story) for 730pm, and trying to fit in cooking of dinner in between. Perhaps it could also be that we seldom eat out now for dinner as Isabelle sleeps at 730pm, and I have had a few cravings for restaurant type dishes and I wonder if I could recreate them at home.
Cod fish is cheaper here in the UK compared to back home, and my family always encourages me to buy more cod fish to enjoy while I am here. I tried steaming it the HK style but for some reason it doesn't come out as I desire it to be - somehow it tastes too healthy for my liking. So I thought of a pan fried cod fish. I found a Mediterranean recipe which I hope to try someday, but for now Chinese style.
Serves 2
Cod fish, 250g
Pinch of salt
Pinch of ground pepper
Corn starch for coating fish
2 tablespoons of cooking oil
4 cloves garlic, minced
1 inch ginger, peeled and thinly sliced
2 stalks of spring onion, sliced diagonally
Sauce
1/4 cup water
1 tablespoon of light soy sauce
2 teaspoons sugar
Preparation
Prepare the fish by patting it dry and scattering salt and pepper on it. Coat it with corn starch on both sides.
Prepare the sauce and set aside
Heat oil in frying pan and fry the garlic, ginger and spring onions till fragrant for about 1-2 minutes.
Remove from pan.
Using the same pan, fry the fish for 5min per side (to prevent sticking onto pan and flaking).
Put fish on serving plate
Again using the same pan, pour the sauce in and wait for it to boil. Add the fried garlic, ginger, and spring onions to the sauce and let them cook for a few minutes
Pour sauce over fish and serve immediately.
